CILANTRO LIME QUINOA

INGREDIENTS:

  • 2 tablespoons extra virgin olive oil
  • 3/4 cup yellow onion, minced
  • 2 garlic cloves, minced
  • 1 cup quinoa, rinsed
  • 1 cup water
  • 1 cup low-sodium free-range chicken broth
  • 1/2 teaspoon onion powder
  • 3 to 4 tablespoons fresh lime juice
  • 1/3 cup organic cilantro, finely chopped
  • salt and freshly ground black pepper to taste

DIRECTIONS:

  1. Heat oil in a large saucepan over medium-high heat.
  2. Add onions and saute 1 minute then add garlic and quinoa and saute 2 minutes longer.
  3. Pour in chicken broth,  water, 1 tablespoon lime juice, and onion powder.
  4. Bring mixture to a boil, then reduce heat to low, cover and simmer 20 minutes.  (Don't remove the lid)
  5. Remove from heat, fluff with a fork, stir in cilantro and remaining lime juice and salt and pepper to taste.
